
There is no party which ends without a dessert, so how can a Christmas Party miss it, let’s see today a special treat for your Christmas party. Christmas Sticky Date Pudding is a one such specially made dessert for the celebration, more traditional families in the west have a different take on the Christmas pudding and it is considered holy with each member of family contributing in the making of the pudding using specific number of ingredients. I however make a pudding only for party purpose and just love to celebrate each festival. Anyhow, whichever way the Christmas puddings are made, it is an absolute delight to have it on Christmas day. I used some dates or khajoor to make a pudding and topped it with some butterscotch sauce and a nice big scoop of vanilla ice cream and it tasted just fabulous. All you need is (serves 6)
Self raising flour – 1 cup
Baking soda – 1 tsp
Unsalted butter – 1/4 cup
Dates – 1 cup (chopped)
Brown sugar – 1/2 cup
Eggs – 2
Vanilla essence – 1 tsp
Muffin pan
Oil for greasing
Vanilla ice cream – 1 brick
Butterscotch sauce – 6 tbsp
Walnuts for garnishing (optional)
Christmas Sticky Date Pudding Recipe
Preparation time: 15 min.
Cooking time: 45 min.
Take 1 cup water in a pan and boil the chopped dates.
Add baking soda and butter. Keep aside for cooling.
Take the muffin pan and grease with some oil.
Pre heat the oven to 180 C.
Take the cooled mixture and whisk vigorously along with eggs and vanilla essence for about 5 min.
Mix self raising flour and brown sugar and mix well.
Pour the batter into the muffin pan.
Bake for about 30 min.
Pour butterscotch sauce and add ice cream over the top.
Garnish with walnuts.
Serve.
