
There have been a lot of times that guests come calling and I’m challenged with what to serve, in this time my recipe of Dhokla comes to the rescue as this is something I can make quickly and is appreciated a lot. Dhokla looks appealing on the snack table and goes well with hot tea or coffee. Dhokla comes from the state of Gujarat and is now consumed all over India with absolute delight. Ingredients needed for Dhokla
(serves 4)
Gram flour – 1 cup
Baking soda – 1/2 tsp
Citric acid – 1 tsp
Salt to taste
Sugar – 1 tsp
Oil – 1 tbsp
Water – 1 cup
For tempering
Oil – 3 tbsp
Zeera – 1/2 tsp
Mustard seeds – 1 tsp
Sesame seeds – 1/2 tsp
Heeng – 1/4 tsp
Curry leaves – 1 tsp
Green chilies – 3 to 4
How to make Dhokla
In a pressure cooker boil 2 glasses of water.
Oil a plate and keep it over a ring so water is below the plate.
In a bowl mix gram flour and water carefully not to form the lumps.
Add citric acid, sugar and salt and mix well.
Add baking soda and mix for about 1 min.
Pour this batter on the plate in the cooker, add some oil on the top and cover the cooker with a plate.
Steam for about 15 min.
You can check with a knife it the Dhokla is cooked by inserting a knife, it should come out clean.
For Tempering
Heat oil in a pan, add mustard seeds.
When they start to crackle, all other other ingredients.
Pour the tempering on the Dhokla.
Cut Dhokla in small pieces, garnish with coriander leaves.
Serve fresh.
