
Have you ever used seasonal vegetables apart from their regular use in curry’s and salads. Well, why not? I was getting in a mood of tasting a different style of achaar when this recipe from my mom came to my mind. Nowadays the winter seasonal vegetables are available all over, you can easily get gajar, mooli and gobhi. Using these three vegetables I made Gajar Mooli Gobhi Achaar and the taste just came out awesome. I’m now more loving my meals because this is wonderful achaar. All you need is (makes about 1 kg achaar)
Gajar – 300 gms (cut in round shape)
Mooli – 300 gms (cut in round shape)
Gobhi – 300 gms (cut in small pieces)
Salt – 60 gms
Mustard seeds – 2 tsp
Methi seeds – 2 tsp
Saunf – 2 tsp
Turmeric powder – 2 tsp
Red chili powder – 1 tsp
Mustard oil – 250 ml
Gajar Mooli Gobhi Achaar Recipe
Preparation time: 20 min.
Cooking time: 15 min.
Boil water in a pan, add the vegetables and boil them for few minutes. Strain and dry them on a cloth for 2-3 hours.
Boil the mustard oil and let it cool. Keep aside.
Dry roast the methi and saunf seeds over a tava.
Coarsely grind mustard, methi and saunf seeds.
Mix all dry masala with the seeds and vegetables.
Mix with oil in a glass container, cover and keep in sun for 3-4 days.
Serve with your main course meals as needed.
