
Just back from the market I was wondering what to have for lunch. I wanted something light, at the same time filling and healthy when I noticed some left over vegetables in the fridge. With all these I made wonderful Mix Veg Wrap, I really had a very nice meal with these. These can be carried out on a picnic in butter paper or just served hot for a different meal. They go well with hot coffee and cold drink. You could add your choice of vegetables, as I used carrot, cabbage and paneer. It’s fairly easy to make these wraps so when you are not in a mood to make a full Indian meal, use this Mix Veg Wrap Recipe and serve fresh.
All you need is (serves 4)
Oil – 4 tsp
Mayonnaise – 4 tsp
Mint leaves – 8-10
For Dough
Maida – 1 cup
Oil – 2 tsp
Kasoori methi – 1 tsp
Salt – 1/4 tsp
For Filling
Carrot – 1 cup (grated)
Cabbage – 2 cup (cut finely)
Green peas – 1 cup (boiled)
Paneer – 1 cup (grated)
Garlic – 4-5 cloves (cut in small pieces)
Ginger – 1/2 inch piece (grated)
Oil – 2 tsp
Chaat masala – 2 tsp
Salt to taste
Mix Veg Wrap Recipe
Preparation time: 15 min
Cooking time: 15 min
Mix the Dough ingredients and knead a soft dough using warm water. Keep aside for 10 min.
Crush the mint leaves and mix with mayonnaise. Keep aside.
In a pan, take 2 tsp oil, add garlic and saute. Add ginger and saute.
Add all other vegetables and saute until done.
Add salt and chaat masala and cook for about 5 min or until crunchy. Keep aside.
Make 4-5 balls from the dough.
Roll flat and fry over a tava with little oil until done on both sides. Wraps are ready.
Spread mint mayonnaise and equal filling on all wraps, roll and close the ends.
Heat over tava for a min. with little oil.
Serve fresh.
