Sheer Khurma

Talking about sweet's what better than a Sheer Khurma. This traditional Mughlai dessert pudding is made with vermicelli in added flavors and milk. It is decorated with dry fruit slivers and served with love. I still remember my childhood days when we used to look forward to my friends bringing this sweet freshly prepared in their homes to us. The richness and sweetness makes for a great festival recipe and most homes have had some or the other recipe passed on from their ancestors. However if you do not have a recipe, do not worry, here I tell you how to make a yummy and delicious Sheer Khurma so you can enjoy the festival of Eid with your friends and family. Eid Mubarak!

Ingredients

 (serves 4)
  •  Ghee - 1 tbsp
  • Raisins - 1 tbsp
  • Cashew nuts - 5-6
  • Chironji - 1 tbsp
  • Vermicelli - 1\2 cup
  • Full cream milk - 1 liter
  • Saffron - a pinch
  • Cardamom powder - 1\2 tsp

How to make Sheer Khurma

Preparation time: 10 minutes Cooking time: 30 minutes
  • Heat ghee in a pan.
  • Add raisins, cashewnuts and chironji and fry till golden brown.
  • Remove in a plate.
  • In the same ghee, fry the vermicelli till golden brown.
  • Remove in a plate.
  • Heat milk in a panand bring to a boil.
  • Let it cook till reduced to half.
  • Add fried nuts and vermicelli and cook for 5-6 minutes.
  • Add saffron and cardamom powder and cook till the desired consistency is reached.
  • Serve it either warm or chilled.
