To make Uttapam, you will need the following ingredients: To prepare Uttapam:- Gather 2 cups of rice (raw or idli rice or a mix), 1 cup of urad dal (split black gram), 1/4 teaspoon of fenugreek seeds, salt to taste, and oil for frying.
- Use chopped onion, tomato, green chili, and coriander leaves for toppings.
- Add other veggies like capsicum, carrot, or sweet corn or customize your uttapam with your preferred ingredients.
Method
Follow these steps to make uttapam at home:- Wash and soak the rice, urad dal, and fenugreek seeds in separate bowls for 4 to 5 hours.
- Drain the water and grind the rice, urad dal, and fenugreek seeds separately in a blender or mixer, adding water as needed to make a smooth paste.
- Put the batter into a big bowl and sprinkle salt. Stir it nicely and leave it to ferment in a warm spot for 5 to 6 hours or overnight. The batter should be thicker than the dosa batter but a tad thinner than the idli batter.
- Heat a cast iron or non-stick tawa over medium flame. Grease it lightly with oil using a halved potato or onion.
- Pour a ladleful of batter on the tawa and spread it gently in a circular motion to make a thick pancake. Sprinkle chopped onion, tomato, green chilli, and coriander leaves on top. Press them lightly with a spatula. Drizzle some oil around the edges and cook for 2 to 3 minutes or until the bottom is golden brown.
- Flip the Uttapam carefully and cook the other side for a minute or until the vegetables are slightly cooked. Transfer to a plate and serve hot with chutney, sambar, podi, or pickle. Repeat with the remaining batter and toppings.
